Just because I wrote a few weeks ago about the artificial aromas on truffle products, I show you today a nice poster Rivera et al, from the University of Zaragoza, presented at the last Tuber2013.com conference. They analyzed the aromas of several truffle oils they found on the market and complain about the use of those artificial volatile compounds added in the truffle oils.
Note the small tubes on the bottom of the poster, where they put three artificial oils, and one tube with a natural oil they produced…and guess what? You would never tell which one was the real one!
Related with this, a new product on artificial truffle aromas that the other day I just found (and of course I bought to taste) in a supermarket: truffle potatos!
