The Oregon Truffle festival swing between a scientific conference on truffles and a food festival, probably trends to the latest. So, to be honest, we had a great time eating truffles all over the weekend (even in the morning hot chocolate 🙂
I have to say that the organization was excelent, with it’s aim to promote the native truffles in Oregon (all dishes used just Oregon truffles, not the european ones) and also promote the use of trainned dogs to harvest just mature truffles (Hilton hotel was full of funny Lagottos romagñolo italian truffle dogs), and not just racking, which is the traditional method to dig them up. Harvesting not ripe and mature truffles alltogether, damaging the truffle ecosistem at the same time and getting in danger future harvests.
The price and people attending make it really different from our spanish truffle fairs. In Spain more focused on rural development.
Looks delicious!
